Extend logging to make debugging easier

During work on AMQNET-610 I needed to extend some logs in order to track down a few nasty issues that were occurring only on slower boxes. I'm not sure if we need all of the changes merged, but some bits might be quite useful for future dubbing on CI if the need arises.
