Fix tests to work with ULID SSTable identifiers to enable uuid_sstable_identifiers_enabled in cassandra-latest.yaml

In CASSANDRA-18753 we identified that we want to also set uuid_sstable_identifiers_enabled to true, while running a CI with it turned on, it failed (1).

Errors do not seem to be serious, it is just the test suite we have is not prepared for the case when uuid_sstable_identifiers_enabled is set to true by default.

We need to fix all these tests so we can have cassandra-latest.yaml containing that property.
