Clarify which sources and APIs support which formats

The DataSet connectors documentation is essentially an empty desert amounting to "you can read files".

The DataStream connectors documentation do not mention formats like avro/parquet anywhere, nor the possibility to read from filesystems (only the sinks are documented).
