[hbase-thirdparty] Shade javax.ws.rs package for use with shaded Jersey

From a comment on the parent ticket,

Jersey is an implementation of the specifications that define that package and its subcomponents. Thus, to use a shaded version of Jersey, one must also shade usage of this package as well.
