[hbase-thirdparty] Shade jackson-jaxrs-json-provider for use with shaded jersey

The only pluggable feature of the this JSR spec that we take advantage of is using jackson-jaxrs-json-provider to get Jackson entity serialization. Rewrite this provider as well so that its use of the JSR API classes is against our shaded packages.
