Prompts in the quickstarts

In the quickstarts Steps 1-5 use $ to indicate the command prompt. When we start to use Kafka Connect in Step 6 we switch to >. The Kafka Streams quickstart also uses >. I don't think there's a reason for this, but if there is one (root vs user account?) it should be explained.
