Ambari Service Discovery mappings should allow override/augmentation with external config

Currently, the only Ambari service discovery configuration that allows overriding via external config file is the URL-to-config-property mappings.

All of the configurations Knox uses to support discovery for services should be able to be overridden or augmented by external configuration, without requiring code changes.
