Leverage value state serialization in JSONMapEntityStores

Today, JSONMapEntityStores are serializing entity states in their own way.
This issue is about leveraging value state serialization to unify both the serialized format and the code.

This is a breaking change from the storage format point of view.
It will also ease pushing POLYGENE-95 in the future.
