Cleanup class and package names

The current code has some less-than-clear naming for a few classes. In addition, the package names could be organized a bit more consistently.

Suggested changes:

• InMemoryTransactionManager -> TransactionManager
• TransactionDataJanitor -> TransactionProcessor
• consistently use hbase<version> as the parent package for each of the hbase-compat modules
